We thought about that with a sprinter van. After it gets old enough turn it into a mini camper.
Sprinter vans have no where near the same cargo space or hauling capacity of the box truck. Certain ones are also known for some expensive issues.
I vote Isuzu or Fuso box truck. Not pretty, but can haul a lot comfortably and get good mileage.

Funny, but not an all out terrible idea.

Searched 2019+ F250s:
58 with 6.7 diesel
33 with 6.2 flex fuel
11 with 7.3 gas
Those include trucks I could have shipped in which is the reason this list says 11 with the 7.3 gas because 4 can be shipped in.

Get a Suburban and swap in a Duramax.

Sell the Outback and get a newer truck that can function both as a DD and for your hauling if you insist on buying one.
If not - buy a box truck.

Outback is way too comfortable and versatile and I love the damn thing. It still puts a smile on my face, gets decent mpg, perfect camping rig, easy to drive and park, etc. No way I'm selling that anytime soon.
Depends on where I can set up my gym. If I do a dual warehouse/store front location it would make sense to get a box truck with dock height access. If not I'd look at lower stuff or pick up trucks. I could even put the gym logo and all that on the side of a box truck.
Not buying something until I get a physical gym location.
For the next few trips I'll either rent a van/truck or a trailer if I can't get what I need into the back of the Subaru. Picking up some large items soon and not sure if I want to try and get them into the Subaru or if I should just rent a trailer.

Box truck with a lift tailgate > loading a pickup truck. I've loaded far too many loads at the farm both ways..
Opening a business = reduce expenses as much as possible.

That will probably be the route I go. Need to see how much is left and what kind of loans and grants I can get as well.

I'd also rent for a year or two before buying for a couple of reasons. First it saves money in the short term while you're getting established. Second you can try a few different things, box trucks, sprinter vans, box truck and towing a trailer, etc. Figure out what you like and then buy when income is more stable.
