Not going to lie. Seeing you all in jeeps and posting pics would be pretty fun. ;)

It'd be awesome, but if I'm buying an SUV it needs to be able to tow the Miata first, off roading will be a secondary concern.

Shouldn't be a problem with the 4L I6. Plenty of torque.

was thinking something with a V8...

And I'm seeing most people put the towing limit at about 2000-3000lbs for the Cherokee

How much towing are you looking to do? Most agile and reliable Jeeps are the I6. The v8's tend to have more issues. and add a lot of unnecessary weight.

Miata weighs about 2200lbs and figure a trailer weighs about 1000 more so there's 3000lbs before any tools, luggage and other equipment. I need something with a reliable 5000-6000lbs capacity.

Looks like you need a truck then. Why cant you just drive the Miata around on its own? Trailer queen much? ;)

It's fully street legal and there's no problem driving to track days. I just don't want to be 1.5 to 3 hours from home with a broken car.

Funny you should say that since that has always been my fear about going off-roading as well haha.

That is why you carry tools/replacement parts with you that are known to break when you go, and you never go alone.

Well I feel that with off-roading it's a little bit easier to ensure you don't have a mechanical failure or an accident by picking your trail carefully and since the speeds are much lower. With a track day the speed makes things a little more unpredictable.

I hate people. My point of going out there would be in a large part to be by myself. So yeah :p I'll stick to running and biking out there ;)
