My tires have tons of tread. But they also maybe more ply than others tires.

Doubtful tires most light duty vehicles use for the last 30 years have 2-4 actual plies. The 10 ply you see listed is just a rating system designed to approximate the number of bias plies it would take to have the equivalent strength.

My Pilot Super Sports actually say how many plies, and what they are made of on the sidewall.
I really want a tire that is great in the snow. Like can air down if need be, but be amazing in snow.

Lot of choices.
Do you need something that you can run year round? Or willing to have a set of winter only tires? Do you need good road manners? How much if any off-road?

I have the ability to have winter only tires. As long as when on they drive okay when there is no snow. I pretty much dont do any off roading.

There are a lot of options, pretty much any LT rated all-terrain tires would do. Default recommendations would be BFG KO2s, Falken Wild peak 3s, or Yokohama Geolander G015s.
